The
Stags Head prides itself in sourcing the highest quality local produce.
Here is a glimpse into the Stags Head Larder...
Fresh
Fish is delivered daily from Fleetwood (a small fishing town
on the Fylde coast ) by Neve's - the largest fishery on Fleetwood docks.
Fresh cod and haddock along with Manx kippers from the Isle of Man are
always popular.
Chickens
and Ducklings are supplied by Reg Johnson from Swainson
House Farm in Goosnargh - just a stones throw from The Stags Head. Reg
Johnson and Bud Swarbrick are the sole producers of Goosnargh corn-fed
chicken and duckling and they now supply all over the country, even
to Harrods, such is the quality of their poultry!
Black
Pudding is a real favorite at the Stags Head and we use the
finest authentic black pudding there is. Ireland's is an award winning
family run business based in Rossendale (The Real Black Pudding Co.).
They say they are "specialist black pudding makers, using only
traditional methods and recipes dating back to 1879". There simply
is no finer black pudding!
Locally
reared meat is a specialty at the Stags, Pendle Lamb
and Curwen Hill Beef are supplied
from John Penny, "The Meat Man", who is based in Clayton-Le-Moors.
The quality of the meat is outstanding, the beef is hung and matured
- something which these days is a rarity - and the result is intensely
flavour packed meat. Just try a rump steak - you could easily mistake
it for a prime piece of sirloin!
Good
old bangers & mash are a firm favourite, and our Sausages
are the best we can find. Produced on a small scale at Jim Beary's farm
in Ribchester, the sausages are made in the traditional way using the
best cuts from thier herd of Gloucester Old Spot rare breed pigs.
Our Cumberland chipolata sausages are juicy little morsels, which are
produced in Kendal by Slack's of Kendal.
For dry cure Bacon, air dryed Cumbrian ham and other
specialties, Richard Woodall is the man. Based in Waberthwaite, a small
village on the western edge of the Lakeland Fells, his family business
has been supplying Cumbrian hams, sausages and bacon for many years
to age old recipes.
Fresh,
seasonal Fruit and Vegetables don't
have far to travel - daily deliveries come from Ribble Farm in Longridge.
Freshly hand-cut watercress travels just a few miles down the road from
Great Eccelston. Seasonal vegetables such as cauliflowers, leeks and
tomatoes are grown just outside Southport at Hesketh Bank.
A
variety of Herbs are grown in the Stags Head garden,
harvested only when needed to include in a certain dish, therefore retaining
as much freshness as possible.
Cheese
really needs a whole chapter to itself! Lancashire produces
some of the finest cheeses in the country - and plenty of them. Mrs
Kirkhams, Singleton's, Shorrock's, Butler's, Quicke's........the list
goes on. That's where Adrian Hill comes in. He and his wife Pam run
a small family business supplying cheeses and delicatessen products
in the North West. He can supply every cheese imaginable and more besides!
We regularly have Butlers Tasty Lancashire Cheese, Cringlebrooks Farm
goats cheese and Garstang Blue on the cheese board plus guest cheeses,
a favorite being Butler's Goosnargh Gold!

Pickles
and Chutneys really don't travel far to reach the table,
as they are all made in the Stags Head kitchen. Using local ingredients
and a mixture of traditional and secret recipes, there is always a tempting
range available at the bar to take home. Take your pick from Sweet Chili
Jam, Apple and Sage Sauce, Mushroom Ketchup, Piccalilli or Lemon Curd.
Mmmm.....
And
for those with a sweet tooth, you can now take home a bag of old fashioned
sweets, think flying saucers, cherry lips, chocolate mice...
Sold in mixed bags by the quarter.
It's
not just the food which is sourced locally - some of our cask
ales are brewed locally from Bowland Brewery and Red Rose Brewery.
Slightly more problematic may be finding a wine produced
in sunny Lancashire! However, Miles Coran from Bowland Forest Vintners
at Whitewell near Clitheroe supplies the Stags Head with a fine range
of reds, whites and rose - even if none of them are from Lancashire!
Freshly roasted coffee comes from the Coffee Exchange
company in Clitheroe, where they have their own roasting house to ensure
the beans reach us in tip-top condition.
